A breakfast casserole is a hearty and delicious way to start the day but perfect for a weekend brunch.

This is an easy recipe to make and can be made ahead too. Cook the filling then throw it all together and bake. If you make this for a weekend brunch, you can have an extra nap whilst it bakes. I like to think of a keto breakfast casserole as a massive egg muffin cup.

Although this is called a breakfast casserole it can be eaten at any time. The Chief Taster dined off this whilst I was away on a trip for a couple of days. I was surprised at how much he enjoyed this and I know he did not heat this up which testifies that it is great cold. I didn’t get any calls on how to work the oven so that’s how I know he didn’t heat up this dish!

Broccoli and cauliflower rice was used for this breakfast casserole recipe because I have been playing around with the combination of these vegetable rice. They go delicious together in my cauliflower broccoli risotto so I thought I would add them both to a breakfast casserole dish. Cheese was thrown in and voila! A hearty dish was baked.

Low Carb Breakfast Casserole

A lot of breakfast casserole recipes will have meat in them so feel free to add sausages or ham to your creation. This broccoli cauliflower breakfast casserole is delicious even for meat eaters though. Perhaps have your sausage on the side and enjoy a slice of this first before you get creative. If you are looking for a meaty casserole try this zucchini casserole with sausage recipe too.

I found this breakfast casserole very filling and easy to make. It’s simply another form of frittata which is one of my loves. If in doubt, throw leftovers with some vegetables in a baking dish, add cheese, eggs and voila! A tasty and healthy dish!

What to Serve with a Breakfast Casserole

Although this low carb breakfast is a hearty meal it is extra delicious with a low carb side. Make a breakfast into a hearty lunch with a batch of keto veggie breakfast biscuits. Serve with a side of low carb hash browns too!

What would it be like without the cheese? Lactose intolerant, sadly. I like the idea of cauliflower and broccoli for breakfast with eggs, of course!

Hi I pre rice my cauliflower and broccoli rice and freeze it so how many grams would I need?

    • Angela Coleby

That's a good idea to freeze it! I might have to do that when cauliflower is on a special price here! I'd say that the cauliflower would be 250-300g and the broccoli 300g

FAQs

Why is my breakfast casserole soggy? ›

Baked egg dishes tend to have issues with becoming too rubbery or watery after cooking. This is especially the case when high-moisture vegetables or dense meats are in the mixture—sautéing the potatoes and vegetables before baking helps to dry the food and concentrate flavors.

How do you keep breakfast casserole from falling? ›

For a puffy egg casserole, you can prevent falling by cooking at a lower temperature, as with this recipe.

Why do you have to refrigerate breakfast casserole overnight? ›

The casserole is covered and refrigerated overnight to allow the liquid ingredients to be absorbed into the bread. This is a perishable mixture and should be cooked the morning or day after assembly.

Should you cook a casserole covered or uncovered? ›

In general, you'll want to bake a casserole covered with aluminum foil for most of the cooking time. Covering the casserole helps lock in moisture and prevents it from drying out. If you don't cover the casserole or uncover it too soon, the casserole will dry out.

How to tell when breakfast casserole is done? ›

How do you know when breakfast casserole is done? Just stick a knife into the center of your egg casserole recipe after 55 minutes of baking. If it comes out clean, your baked egg casserole is ready!

What does the binder of a casserole do? ›

The binder is the sauce, which holds ingredients together.

How do you moisten a dry breakfast casserole? ›

Covering the dish will trap the steam in and keep it moist while it heats. How do you moisten a dry casserole? Add a little water or milk to the top of the it before reheating.

How to keep a casserole from getting soggy? ›

To prevent a soupy casserole, be sure to fully thaw any frozen vegetables in a colander over a bowl, and pat dry, squeeze excess moisture out of greens like spinach or chard, and quickly precook watery fresh vegetables like onions, mushrooms or squashes just until they release their moisture.

How do you fix a wet casserole? ›

Thicken a meat casserole the most popular way with flour.

This way, the flour will soak up the juices and fat in the pan. Add about one teaspoon of flour at a time until you get the right thickness. Use oatmeal four if you have a gluten allergy.

How do you make egg casserole not watery? ›

A corn starch and water mixture would probably work, but I find arrow root and water works well using less and at lower temperatures. Just adding it to the casserole before baking should thicken it without adding any other steps.
